My first Wilton Cake!

So...I enrolled in the Wilton cake decorating course I just to learn some techniques. I gotta say that the classroom is too small, my teacher is a nice lady but she's not involved as much as I think she should be so I promised myself that I'll make the best of it and try to learn as much as possible.

My first cake was almost a disaster because I had to use a small oven due to my kitchen oven being broken. I definitely regret not baking it the day before! I finally finished cooking dinner and icing my cake at 6 pm and the class was at 6:30 but I got there on time even though traffic almost made it impossible.

Ok sorry about such a long story, here is my cake :D






I used a Duncan Hines Butter cake mix with a twist (Recipe Below) I made the Buttercream icing using Wilton's recipe on the Course book.






I filled it with Dulce de Leche and it was delicious!




Duncan Hines Butter Cake with a Twist

1 Box Duncan Hines Butter cake mix
4 Eggs
3/4 Cup Canola Oil
2/3 Cup Milk
1 Teaspoon Vanilla
1/2 Instant Vanilla Pudding

Blend all ingredients with a mixer at medium speed for 2-4 minutes.
Split batter into 2 pans (I used 2 8-inch pans) and bake according to the box instructions
Cool completely before frosting.

Wilton Buttercream Icing Recipe (Stiff Consistency)

1 Cup Vegetable Shortening
1 lbs (4 Cups) Powdered Sugar
1 Teaspoon clear vanilla extract
2 Tablespoons of Water or Milk (it will require refrigeration if milk is added)

In large bowl, cream shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk or water and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.

Halloween Cupcake Fun!

For the Cupcakes I used Martha White cupcake mixes but my twist for a more delicious cupcake is to add 2 tablespoons of oil per mix. Oil makes them more moist.




Cream Cheese Frosting

1/2 cup softened butter
8 ounces cream cheese
1 pound powdered sugar
1 teaspoon vanilla

Mix all ingredients on high until soft and whipped. Spread onto completely cooled cupcakes, or place into a pastry bag with a large star tip and have fun!

Store in fridge, as icing will soften at room temperature.

My first Marshmellow Fondant Cake

I'm in love with MMF (marshmellow fondant). It tastes delicious compared to the regular fondants. This cake I did as an experiment and it was my nephew's Birthday so we did some celebrating as well.
The cake is pineapple flavor with cream cheese filling.

Here's my first Birthday cookie bouquet! I made it for my daughter who will be turning 3 in less than a month. She's my biggest cookie fan...lol
